I found the following helpful links on my journey:
handbrake.com - crates MP4 video from most formats
http://firefogg.org which is a plugin for Firefox and you can create the other two (ogg and webm) video formats.
You may want a fall-back to flash for older browser users and I used:
http://www.osmf.org/configurator/fmp, which generates the JS markup needed.
I have always found you guys very helpful and so I hope that anyone planning to use HTML5 video in a project, will find a use for at least some of this info.
