error above shows on my shopping cart when one attempts to pay thru paypal

Looks like you have a few server issues that you need to correct first. The biggest error is not having PHP Extensions enabled.

Your php version is solid however you will need your hosting provider to update the curl version, it is not compatable with the newer version of PHP

I am experiencing similar difficulties, but a different line number (270). My cart had been working, my HD crashed, I rebuiltit and reinstalled SC and SC Pro and after recreating the cart and publishing I get:
Fatal error: Call to undefined function curl_init() in /home/tbcocala/subdomains/welcomedesk/ccdata/php/checkoutpp.cls.php on line 270
Any help is appreciated. I need my cart back (working)!
